I see where you're coming from with Odin - he just wasn't scary or menacing or 'powerful' throughout the game. And as you said, the big final boss fight was too easy.
And by proxy that's what a game with the namesake of Ragnarok needs. This entry in God of War is named after a cataclysm war that features Odin and Thor, the fact that this entire finale was shorter than a sidequest about Freya's former marriage screamed volumes to me. The ending was rushed and Odin's presence or lack thereof hurt the game.
